Cloud Kitchen Unit Economics

Before outlet 2, outlet 1 must prove its unit economics. Target: Food cost 28–35%, Labour 15–20%, Rent 8–12%, EBITDA 15–25%. If you're not hitting this, solve it before scaling.

Getting Your First Outlet Right

Location is about delivery radius, not foot traffic. Select a zone with high order density on Swiggy/Zomato. Keep the menu to 25–35 items with 2–3 hero dishes. Only include items that travel well.

Delivery Platform Optimisation
